ABSTRACT: The fast growth of cloud kitchens in India has drastically changed the urban meal delivery environment. However, issues with customer confidence, logistical effectiveness, delivery efficiency and safety, and environmental sustainability are brought on by this expansion. This study uses original survey data from urban India to examine customer behavior inside the cloud kitchen ecosystem. The study highlights the important elements of customer pleasure and trust, particularly the crucial part that packaging and hygienic transparency play. In order to increase consumer trust, the study suggests an AI-driven smart logistics framework that takes into account consumers' preferences for environmentally friendly packaging and sustainable delivery alternatives while increasing transparency and streamlining delivery processes. This study illustrates how smart logistics with AI capabilities may maximize market sustainability and close the trust gap. According to the results, including AI for green logistics and real-time hygiene monitoring is crucial for long-term market viability.
